Our gelato machine

  1. Cow eats grass off scale, pushing it down
  2. Causing the electricity to switch on
  3. Now the vacuum-pump is switched on
  4. Creating suction in the milking machine
  5. The milk flows into the milk pump, pushing it along
  6. The milk is separated into milk and cream, dripping down
  7. The heavy bowl flips, the liquid falls in the gelato machine
  8. The rope triggers the boxing glove that shoots off
  9. Now cherries fall and distressed bee’s start flying around
  10. They freak out the little mouse that wants to run away
  11. Causing the conveyor-belt to transport the cherries
  12. Finally the cherries are added to the gelato machine!
  • Milk

    Our milk is sourced from a specific breed of cow native to the Channel Islands. Unlike regular milk, channel island cows yield milk with higher fat and protein (which allows for longer protein bonds) and low water content, allowing less free water to crystalize in our gelato; leaving us with a silky finish every time. We then take into account the percentage of lactose in this process and then begin balancing each recipe to ensure the ideal consistency is achieved.  This meticulous process ensures a coexistence of clean flavour supported by soft and silky texture.

  • Sugar and Fat

    All our gelatos have a specific sugar content to ensure “scoop-ability” and softness. The higher the sugar, the softer the gelato. We test the amount of sugar in our ingredients with a refractometer and formulate recipes specific to the ingredients, designed to maximize the flavor of each ingredient.

     

    After the mix is made, we age flavors in our pasteurizer at 4ºC for an average of 6 hours, however fatty flavors such as our hazelnut & pistachio need more time to allow the protein chains to reform and bond. In fact, our chocolate gelato is aged for 24 hours before being churned.

  • Fresh as Fairies

    Not only do we use fresh ingredients for our gelato, we create new batches every two to three days. We have a strict policy of not serving gelato that is more than 4 days old. We know where all our ingredients come from and have a close relationship with all our suppliers. Using fresh ingredients means that our gelato has a shorter ‘ideal’ shelf life, but a cleaner and more real flavor. After all you are what you eat.

  • All natural, top quality ingredients

    All our flavours are 100% natural, clean, (when applicable) vegan and gluten-free. We try our best to maintain the integrity of the product and showcase what we believe is the best there is to offer. Our nuts for instance come directly from regions within Italy with the highest quality we could find. The hazelnuts have an IGP designation and our Pistachio are from the Torino region in Italy. These nuts are turned into the most silky paste that you can imagine with no added colouring or emulsifiers. We don’t believe in one fits all solutions, but we always balance the gelato recipe to ensure the quality. This is why you will love our gelato as much as we do:
